Dosa is an incredible dish. Its ingredients have no limitation. Be it wheat flour, oats, or buckwheat flours, one thing never changes- Its taste. It tastes delicious every time. Now Kuttu Dosa is what we call buckwheat flour. Dosa made with it is not only tasty but it’s healthy too.
For the potato filling heat some ghee in a pan. Now add mashed potato and some chopped ginger. Add some salt and chili powder. Mix it well till it becomes light brown. The potato filling is ready now.
In a bowl mash arbi (colocasia) and mix it with buckwheat flour and salt. Add some water to get that perfect consistency. Next add the ajwain, green chilies, ginger, red chili powder, and mix again.
Add more water if necessary and stir in one direction until the perfect consistency.
Take a tawa and heat it over medium flame. Dab some oil or ghee all over the tawa surface. Pour a ladle full of batter and spread it in a circular motion on the tawa surface. Drizzle a few drops of oil or ghee around the edges to make it crispy. Carefully flip it over to cook the other side also.
Now add some filling on the top and fold the dosa over it.
Serve hot with mint and coconut chutney.
