Ingredients (1 Cup = 255 ML)

  • 1 Cup Urad Dal
  • 1 Cup Poha / Aval / Avalakki / Flattened Rice Thick
  • 2 Cup Idli Rice Or Sona Masuri Rice
  • Water for soaking
  • 1 Tsp Salt
  • Oil for Greasing

Steps to prepare mallige idli batter

  • Take 1 cup urad dal and 1 cup poha in a large bowl adding enough water soak for 4 hours
  • In another bowl soak 2 cups idli rice for 4-5 hours. You can also use sona masuri rice or any raw rice
  • Drain off the water and grind the soaked urad dal – poha in a blender till the batter is smooth and fluffy
  • Similarly, transfer soaked idli rice draining off the water completely in the blender to blend it into a slightly coarse paste
  • Transfer the rice batter to the same mixing bowl and mix well both the batters
  • Allow the batter to rest and ferment in a warm place for 8-10 hours till the batter doubles
  • On complete fermentation after 8 hours, air pockets are present on the batter
  • To taste add 1 tsp salt to the batter

  • Grease the idli plate with oil so that the idli doesn’t stick to it
  • Scoop the batter into idli plate greased with oil and place inside the pressure cooker and steam for 12 minutes on medium flame
  • You can check if the idli is solid and fluffy with a toothpick inserted through the idli. The toothpick comes out clean when the idli is properly steamed and cooked
  • Finally, soft mallige idli is ready to be served with chutney and sambar.
