Masala uttapam with idli dosa batter

When you are tired of having idlis add a tinge of masala and use the same idli batter to cook masala uttapam. Ingredients for Potato Masala:    (1 CUP = 250 ML)

  • 5 medium sized boiled potatoes
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1 teaspoon finely chopped ginger
  • 1 chopped green chili
  • A pinch of asafoetida
  • 1/2 cup chopped onion
  • Few chopped curry leaves
  • 1/2 teaspoon turmeric powder
  • 1/2 cup water
  • Salt as per taste
  • 2 tablespoons chopped cilantro
  • 2tablespoon of rice bran oil

Ingredients for Masala Uttapam

  • 3 cups readymade idli batter (you can also take dosa batter)
  • 1/2 cup finely chopped onions
  • 1/2 cup finely chopped tomatoes
  • Sambar powder as required
  • Red chili powder as required
  • Rice bran oil as required

Potato Masala Recipe

  1. Rinse and boil 5 medium sized potatoes in a pressure cooker for 3 to 4 whistles on medium flame
  2. Once boiled, peel off the potato skin and mash them and keep aside
  3. 2 tablespoon full of rice bran oil in a kadai and add 1 teaspoon mustard seeds to crackle
  4. Add 1/2 teaspoon cumin seeds and saute till it crackles and then add 1 teaspoon finely chopped ginger, 1 chopped green chilli and a pinch of asafoetida
  5. To the mixture add 1/2 cup chopped onions and 8 to chopped curry leaves and mix them well
  6. Sauté the mixture till the onions turn translucent and add 1/2 teaspoon turmeric powder and mix very well
  7. When the masala is fried properly add the mashed boiled potatoes and salt as per taste
  8. Finally add 1/2 cup and let the curry simmer for about 4 to 5 minutes on a low flame till you get consistency of the curry as per your taste
  9. After turning off the flame add 2 tablespoons chopped coriander leaves and mix well

   Masala Uttapam Recipe

  1. Heat oil on the tawa
  2. Pour a ladle full of idli batter and spread lightly to get thick uttapam
  3. Add some chopped onions and tomatoes and sambar masala powder and red chili powder you can also add green chilies if you want
  4. Allow it to cook and add rice bran oil with a spatula on the uttapam
  5. With a spatula spread the potato sabzi on top of the uttapam
  6. When base becomes golden crisp flip the masala uttapam.
  7. Cook till no uncooked batter remains then gently lift the masala uttapam and serve.
  8. Masala uttapam is ready to serve with coconut chutney or sambar.
