Idli and dosa are very much indigenous to south Indian cuisine however, they are famous worldwide. There are a number of variations of this south Indian cuisine each savored for its own idiosyncratic taste. Mysore dosa with generous use of red garlic chutney is one such extended variation of dosa. Cooking dosa or idli is really easy and less time consuming with instant dosa batter that is available in the market. Ingredients (1 cup = 255 ML)

For Mysore Masala Dosa Batter

  • 1½ Cup Dosa Rice / Sona Masuri Rice
  • ½ Cup Urad Dal
  • 1 Tbsp Toor Dal
  • 1 Tbsp Chana Dal
  • ¼ Tsp Methi / Fenugreek Seeds
  • Water for Soaking
  • ½ Cup Thin Poha / Flattened Rice

For Aloo Bhaji:

  • 2 Tsp Oil
  • 1 Tsp Mustard / Rai
  • ½ Tsp Cumin / Jeera
  • 1 Tsp Chana Dal
  • ½ Tsp Urad Dal
  • Pinch Of Hing / Asafoetida
  • 1 Dried Red Chilli
  • Few Curry Leaves
  • ½ Onion Finely Chopped
  • 1 Green Chilli Finely Chopped
  • 1 Inch Ginger Finely Chopped
  • ½ Tsp Turmeric / Haldi
  • ½ Tsp Salt
  • 3 Potato Boiled & Mashed
  • 2 Tbsp Coriander Finely Chopped
  • 1 Tbsp Lemon Juice

For Red Chutney:

  • 2 Tsp Oil
  • 2 Tbsp Chana Dal
  • 1 Inch Ginger Chopped
  • 3 Clove Garlic Chopped
  • ½ Onion Finely Chopped
  • 3 Dried Kashmiri Red Chilli
  • ¼ Tsp Turmeric / Haldi
  • ½ Tsp Salt
  • ¼ Cup Water To Blend
  • Other Ingredients:
  • ½ Tsp Salt
  • ¼ Tsp Sugar
  • Butter For Roasting

Steps to Make Mysore Dosa

Mysore Masala Dosa Batter Recipe:

  • To make the batter soak 1½ cup rice, ½ cup urad dal, 1 tbsp toor dal, 1 tbsp chana dal and ¼ tbsp methi for 5 hours.
  • Drain off the water and transfer the soaked ingredients to be grinded in a mixi grinder
  • Wash ½ cup thin poha and add it to the mixture
  • Add water as required and blend the mixture to a fine paste
  • Transfer the dosa batter into a large mixing bowl
  • Allow the batter to ferment for 8-9 hours. Remember hot and humid weather hastens the process of fermentation

Mysore Dosa Aloo Bhaji Recipe

Heat 2 tsp oil in a kadai and add 1 tsp mustard, ½ tsp cumin, 1 tsp chana dal, ½ tsp urad dal, pinch of hing, 1 dried red chilli and few curry leaves when the oil is heated

  • Add ½ onion, 1 green chilli and 1 inch ginger and saute it well
  • Add ½ tsp turmeric and ½ tsp salt and mix it well
  • Now add 3 boiled and mashed potatoes and mix it well
  • After turning off the flame add 2 tbsp coriander and 1 tbsp lemon juice mix it well

Mysore Dosa Red Chutney Recipe:

  • Heat 2 tbsp oil and roast 2 tbsp chana dal till it is golden brown
  • Add ½ onion, 1 inch ginger, 3 clove garlic, 3 dried red chilli, ¼ tsp and turmeric and sauté the ingredients well
  • Transfer the mixture to be grinded in a small mixi adding ½ tsp salt
  • Blend it smooth by adding ¼ cup water
  • Red chutney is ready to be served with mysore masala dosa

Mysore Masala Dosa Recipe:

mix the fermented dosa batter well it gently and take required amount of batter in a bowl. Refrigerate the extra batter  in an airtight container

Add ½ tsp salt and ¼ tsp sugar to the batter and mix the batter well

Heat 1 tsp of butter in a griddle and pour a ladleful of batter. Spread out the batter in a circular motion

Add 1 tbsp red chutney and potato bhaji filling spread on top of the dosa

Roast for 15-30 seconds and fold the dosa

Mysore Masala Dosa is finally ready to be served hot with coconut chutney and sambar
